There will soon be an abundance of herbs in the garden that need to be used or will eventually be wasted. While I dry some herbs such as thyme and oregano, others such as parsley, basil and cilantro are better saved by freezing into ice cubes! There are two ways to do it.
Method 1
Wash and chop herbs and fill into an ice cube tray, pour over some water and freeze. When fully frozen, pop out of the trays and store in a well-sealed container or bag. Parsley, cilantro, tarragon, oregano are great stored in this manner and can the ice cubes can be added to sauces, braised dishes, and oven-roasted meals For herbs like lemon balm, chocolate mint, holy basil, and lavender, I can easily add an ice cube to water and other cold beverages.
Method 2
Wash and chop herbs and put it into a blender with 10-12 cloves of garlic. Add in enough olive oil to blend. Freeze in ice cube trays, then pop out for storage in a sealed container or bag. Add to pasta, sauces, thaw and use to make garlic and herb bread, or add to sautéed dishes. The plus of this method is that your garlic is also being preserved and this is a great way to use up both herbs and garlic in dishes that do well with garlic. This is great with parsley Chose if you would like to do do a mix of herbs or only one.
